Red Pepper Jelly - With neighbor gift printables


Red pepper jelly is really good along with crackers and cream cheese.  I like to make it around Christmas time because sometimes I am overwhelmed by all of the sweets and need something savory for a snack.

Red Pepper Jelly
About 7 red peppers
2 c apple cider vinegar
2 t salt
2 t chili powder
10 c sugar
2/3 c lemon juice
1 6-oz pkg liquid pectin

Cut peppers into chunks and chop in blender or food processor until pureed to make 4 cups.  Mix peppers, vinegar, salt, and chili powder in a large pan.  Boil 10 minutes, stirring occasionally.  Add sugar & lemon juice and bring back to a boil.  Add pectin and boil 2 more minutes.  Skim foam if needed.  Remove from heat and pour into sterilized jars and seal.

Tips:
Red peppers are cheapest at Costco.
Canning supplies and pectin are cheapest (by far) at Walmart.
1 batch filled about 20 small jelly jars.

For the printables for the jars and tag, save the following .jpg files by right clicking over the picture and choosing "save picture as".  You should be able to print 6 per page.


You can add your own message/name using any photo editor.
